CA DEI ZAGO, VALDOBBIADENE, Veneto – Biodynamic

Since 2010, Christian Zago has been making Triple A Prosecco from biodynamically-farmed vines in the heart of Valdobbiadene. The 6.5 hectares comprise Glera and other native varieties (co-planted) and are on terraced slopes between 250-400 m above sea level. His Col Fondo is a reference in the natural wine world. Fermented in old cement vats and brought to bottle with minimal intervention, it is beautifully defined for a undisgorged wine. The Metodo Classico comes from a tiny parcel, a wine of rare elegance and pristine purity.
