The Guimaro family own 9 ha and lease a further 14ha in the Amandi area of the Ribeira Sacra region. Prior to the establishment of the adega in 1991 Pedro’s family produced small quantities of wine for their own consumption and sold their wine in garrafones (20L glass containers) to local cantinas. Luis Buitrón, an oenologist from León was instrumental in the creation of the Riberia Sacra D.O and helped the Rodriguez family begin estate–bottling their wines. Guimaro was one of the first adegas to join the appellation in 1996. The vineyards are farmed organically whilst vinification uses wild yeast fermentations, foot treading and low sulphur usage, in general handling of the grapes and production is deliberately and meaningfully ‘old-fashioned’.
