CHÂTEAU DU CÈDRE, PASCAL VERHAEGHE, Cahors – Organic
If you think that Cahors is just brushing your teeth with tannin-flavoured twigjuice, think again! The estate was originally created by Charles Verhaeghe on vineyards devastated by the frosts of 1956 in Vire-Sur-Lot. His sons Pascal and Jean-Marc duly studied winemaking, the former in Burgundy and California, the latter in Bordeaux. At Chateau du Cedre ecological viticultural methods means eschewing weedkillers and chemical fertilizers, yield reduction with serious pruning, leaf stripping for greater air circulation and harvesting the grapes at optimal ripeness. All of this yields the superb raw material essential to create fabulous wines. In the cellars the Verhaeghes aim for softness and harmony. The objective is to exploit the full potential of their grapes. To achieve this, no oenological inputs are used during the vinification process. Wine production is carried out with indigenous yeasts and without added sulphites.
