As far as the vermouth production process is concerned, Jean-Luc Josse aims to make them according to the grape variety and the vintage. The wine’s structure allows them to adjust the alcohol and aromatics to preserve the wine’s typical character. They only work with the natural sugars found in the wine. The residual sugar content depends on the grape variety (acidity) and the vintage. They are unfiltered, with little or no sulphur added (depending on the vintage). They co-work with natural winemakers (such as Nicolas Reau) to provide the highest quality products.
