Angiolino Maule’s estate in the hamlet of Biancara covers about 9 ha. For over 16 years he has ploughed in his vines and eschewed any soil treatments. Using biodynamic viticultural practices he has created an organic, living soil and ecosystem befitting the health of the vines and their resistance to sicknesses. Vinification, ageing and bottling must be consistent with the work in the vines and involve no additives that compromise the natural fruit material. Vinifications are conducted without temperature control, the addition of sulphur, enzymes and yeast and without fining or filtration.
