Azienda Agricola COS
Founded in 1980 in Vittoria in the south east of Sicily by Giusto Occhipinti, Giambattista Cilia and Cirino Strano, the trio started with just 3 hectares of land and became the youngest winemakers in Italy. Today, Cos covers 50 hectares planted with autochthonic vines such as Nero d’Avola, Frappato, Grecanico and Inzolia as well as international varieties such as Cabernet Sauvignon and Merlot. Biodynamic farming is practiced to help them find and maintain a harmonious balance with nature and craft wines that are as representative as possible of their time and place. Since 2000 Cos have been using amphorae in their winemaking and now have 150 amphoras. The use of clay allows the wine to breathe as it would in wooden barrels but without the contribution of additional aromas or flavours allowing the territory of origin in the wines to shine through.
