DOMAINE MAS AMIEL, OLIVIER DECELLE, Maury – Organic
Maury is surrounded by the Rivesaltes appellation. The mountains to the north denote the end of Corbieres and of the Aude department. Maury is thus in Pyrenees-Orientales and Catalan in nature. The vineyards, in fact, lie just below the Cathar fortress of Queribus. The red Maury is pure Grenache on broken schists. Fermentation in concrete vats, the alcohol for fortification is added while the wine is still in the vat (mutage sur les grains). The wine evokes the fruits of a hot and sweet summer’s orchard: an aromatic explosion black cherries, raspberries, blackberries and blackcurrants, a crunchy delicacy on the palate that is combined with sweet and savoury notes. A fascinating white version is made from old vines Grenache Gris.
