On the chalk hills of an ex-pig farm south of Salisbury, you’ll find a two-hectare vineyard planted and farmed biodynamically by Hugo Stewart (Domaine Hugo), and the adjacent winery of Nicola & Daniel Ham (Offbeat Wines) – marine biologists turned winemakers. The trio can be found on a Sunday afternoon in deep discussion of pruning techniques and the joys of good cheese.
