SATO WINES, YOSHIAKI & KYOKO SATO, Central Otago – Biodynamic
Starting out in 2009, Yoshiaki Sato is a dynamic force in the natural wine world. Having worked with Domaine Bizot in Vosne-Romanée and Domaine Pierre Frick in Alsace, he later found his place in New Zealand where he now produces a small number of natural wines. Refusing to use industrial yeasts and bacteria, he does not add any chemicals or additives during vinification. Thanks to this carefully thought out process Sato Wines directly reflect the terroir of the vineyard conveying the natural flavour of the grapes.
