Domaine Gilles Paris

DOMAINE GILLES PARIS ~ organic conversion 

Gilles Paris comes from the village of Quincié-en-Beaujolais, where his family has always been working the vines. In 1990, he moved to Chiroubles and started to cultivate his family-in-law’s vines for the local cooperative cellar. In 2005, he decided to start his own vineyard and made his first cuvée.

Today, he grows and vinifies 4 hectares of Chiroubles, 2 hectares of Fleurie and 2 hectares of Morgon. He aims to let the wines express their terroir. There is no use of chemical products among the vines, all the work is done manually or with tractors if necessary. The wines undergo carbonic maceration and fermentation is with indigenous yeast and without the addition of sulphites. The vineyard is in conversion and should obtain organic certification in 2023.
