The Matassa estate comprises 12 ha of small plots of very old vines surrounded by scrubland in the Calce region of the Côtes du Languedoc. Since 2003 biodynamic practices have been applied in the vineyards including the use of semi-permanent cover crops which are ploughed in and re-sown every three years. In the past decade the alcohol content in the wines has dropped between 1 and 2o with this approach, providing flavour before sugar. Grapes are hand harvested and fermented with indigenous yeasts and no additives are used except for a tiny amount of sulphur after fermentation.
