DOMAINE BALLORIN, Morey-Saint-Denis – Biodynamic
With holdings in eleven different vineyards, Gilles Ballorin is making waves in the biodynamic wine world. Despite taking on the tough and already well represented terrain of Burgundy, he works hard all year round to produce mature grapes so that nothing extra is needed during vinification. The answer lies in the soil: ‘The grapes are good if the soil is healthy’ he comments, ‘sometimes you can smell the life in the soil.’ The wines are natural and are produced using ambient ferments with indigenous yeasts in resin-coated vats and stainless steel tanks. This results in a natural malo, no filtration, no fining, and less than 30 mg/l of sulphur.
