ALICE & OLIVIER DE MOOR, Chablis – Organic
Alice and Olivier planted their first vines towards the end of the 80’s near the village of Courgis, north-west of Dijon. Today they have 10 ha of vineyards spread across 12 parcels of land in Courgis (Chablis AOC), Chitry and Saint-Bris-le-Vineux (Bourgogne AOC) and Beine and Fleys (Chablis PC) all of which are farmed organically. Grapes are picked by hand and only natural yeasts are used, no sulphur is added during fermentation and there is no chaptalisation, no fining or filtration. The aim is to intervene as little as possible in the wine-making process thus allowing the wine more freedom to become unique and expressive. Since 2009 they have also worked on Le Vendangeur Masqué a négoce which buys only the best hand-harvested organic grapes (or juice), with wines produced in the same way they always have.
