Alongside all the wonderful winemakers present at the Fair we are delighted to announce the following beer and spirit companies will be taking part:
Established in 2009 by distiller Ian Hart and Hilary Whitney, Sacred Microdistillery is located in a residential street in Highgate. It is unusual in that it distils its spirits using vacuum distillation rather than a traditional pot still. Vacuum distillation occurs at a much lower temperature (35-45°C) than pot distillation (85-95°C) so the distillates are lusher and fresher. Sacred Gin was awarded a Double Gold Medal at the San Francisco Wine and Spirits Competition 2013. Encouraged by the success of Sacred Gin – it was awarded a Double Gold Medal at the San Francisco Wine and Spirits Competition – Ian has created several additional gins, each of which focuses on a particular key botanical, including Pink Grapefruit and Cardamom. He also produces Sacred London Dry Vodka, which is made using the same process as Sacred Gin, Sacred Rosehip Cup (the English Alternative to Campari!) and three vermouths, all made with English wine from Three Choirs in Gloucestershire: Sacred English Spiced Vermouth, Sacred English Amber Vermouth and Sacred English Dry Vermouth.
Hidden under the railway arches in Herne Hill SE London, a stone’s throw from Brockwell Park, you will find Canopy Beer Co; a brewery and tap room producing small batch beers since 2014. Their emphasis is on drinkable, accessible beers made with minimal intervention – no filtration, no finings and no pasteurisation. They make beer that they like to drink, and they think you will like it too.
